AUGUST: ’tis the Season to Eat…

In the South it’s growing warmer and Spring is almost upon us. The sun is rising just a bit earlier and the seeds and seedlings are in the grown ready to grow. The end of winter brings a delightful harvest with many citrus fruit, berries, and winter vegetables.

Herbs grow well this time of year before the sun comes out hot and strong. It’s the time to grow, harvest and store them. As you and I both know some herbs are just unavailable at certain times of year. Make sure you’ve got your favourites! Storing, fermenting and canning are a few things to explore in the near future.  This is a list of the fresh produce in season and available in August. Remember to Cook Out Not Throw Out!! Healthy and Wholesome cooking can go light on your hip pocket too. It just might take a tiny little bit of planning and you’ll soon find that having a Healthy, Wholesome and ready to eat meal on your table in minutes. It takes far less time than driving to the nearest take-out!!

This month the produce is ripe for Stir-fry! Any Stir-fry! Be it meat, egg, tofu or nut it’s fast and completely Delicious!! Try it with a brown rice, quinoa and nut or lentil mix or if you don’t have the extra time noodles are faster. Rice is a fantastic food to add turmeric to and improve your health at the same time. 

Left over stir-fry can be made into Japanese pancakes called Okonomiyaki. This is a great breakfast eaten regularly in Japan. If this takes your fancy be sure to supply yourself with plenty of Yakitori Sauce. The choice of seasonal fruit is fantastic! Blueberries, figs and mangoes are among my favourites or should I be more precise and say Are my favourite. Right now, Blueberry Ice-cream is screaming at me and so is a warm Blueberry Crostada served with fresh cream. Then a Raw Mango Pie or a warm Fig and Pumpkin Tart. Hmm Yummy… 

Ok, I think I’ve just inspired myself and must go make something for dessert, after all, all those quick stir-fry dinners might just leave me enough time to make an Awesome Treat!! Remember to Cook Out Not Throw Out so check your pantry first.

Eating Okra raw and crushed every morning is also a folk remedy for diabetes.

Ok! Let take a peek at the fruit before this article gets too long. Hmm… I can taste a whole lot of different cobbles with all the apricots, berries and peaches. Don’t worry about the wheat and sugar when you can substitute oats and a bit of honey and end up with a healthier crumble. On the other hand besides an everyday fruit platter the other things that stand out are the lemons which make yummy Lemon Butter or salad dressing and the berries which make a divine Raw Chocolate Cake.

Wow! What a wonderful harvest. Ready to Cook? I simply adore blueberries!! Blueberry sugar-free and dairy-free ice-cream, wheat-free blueberry crostata heated and served with ice-cream. The list just keeps going: Blueberry layered cake, Blueberry Raw Chocolate tarts… hmm yummy!!

Removing the blueberries we have cherries and strawberries where I would add chocolate or vanilla to either of them or make a compote or homemade jar or munch on them on their own. Berries in drinks are a favourite with me and here we can definitely go Naughty or Healthy, cold and refreshing! For something different add peaches to a mild curry and taste the flavour!

The June Vegetable harvest is just packed with all the foods that are Healthy, Colourful and simply delicious. To be honest I don’t know where to start!! There are hundreds of salads here waiting to be put together. Whatever takes your fancy can be combined to make a Wholesome, Healthy and Sustainable salad. Here we use our imagination, creativity and taste-buds. Cooking Pot the iPhone App gives some fantastic recipe ideas.

My simple rule of thumb with salads is colour. If it’s colourful and looks fantastic it usually is. For example why do tomatoes go with greens, cucumber and onion? Capsicum adds more texture and colour and slices of orange appear just vibrant against salad greens. Another example would be the warm lentil salad where the deep earthy colour of the lentil is broken by the strong red of tomato. Then we can take a look at a baked vegetable salad on a bed of greens and garnished with pepitas. It not only comes together visually but your taste-buds will love it too.

On a more scientific note the iron in greens needs vitamin c to be better absorbed by our bodies so nature is definitely telling us something. Don’t be fooled, a more colourful and vibrant looking salad is also much better for you.

Gosh! Winter is looking a bit bleak but we do what we can with what we have. Just from the ingredients above I see a Potato and Leek Soup. Chicken and Leek Pies, Potato-crusted Three Cheese Pie, Lentil and Carrot Soup and a huge salad with Spinach, Fennel and Asian Greens. A Mandarin Round or Apple and Rhubarb pie for dessert.

Citrus fruits, in particular Lemons are a must for a healthy morning detox and alkalising drink. Try a thick slice with warm water and a tablespoon of coconut oil. In the Southern Hemisphere May is the last month of Autum. It’s definitely getting cool now. The sun isn’t as warm and it doesn’t appear as high in the sky. There is a lot of red turning to brown in the colour spectrum and the Home-Cooking palette turns to warmer and cosier food.
