2 ½ cups salted cashews, processed to flour

3 eggs

125g natural yoghurt

125g cottage cheese

1 ½ tsp baking soda

3 tsp chia seeds

3 tsp linseeds

¼ cup sunflower oil

  1. Preheat oven to 180C/350F.
  2. Starting with the dry, mix all ingredients together well.

2 cups cashews

1 cup dates

1 tbsp coconut oil

½ salt


½ cup coconut oil

½ cup lemon juice

½ tsp turmeric

2 tbsp maple syrup (optional)

  1. In a food processor, process all Base ingredients: nuts, dates, oil and salt until you have a slightly sticky consistency. Press into a baking tray.
  2. In a bowl hand beat all topping ingredients. Make sure the coconut oil is melted. Pour on top of the nut mixture in the tray, sprinkle with coconut if desired and refrigerate immediately.
  3. Let set at least 40 minutes. Slice and serve cold straight from the fridge.

Variations: For the base you may prefer almonds, walnuts, coconut, macadamia or a mixture. Dates can be substituted with sultanas, apricots or another sweet dried fruit of choice. You might like to add 1 tsp of ginger in the base to spice things up!

For the Topping adding lemon zest would make the slice more tart. Combining lemon with orange would sweeten it. Stevia can also be added to further sweeten the topping. The imagination can fly free here. It’s up to You!

The BEST thing about this recipe is that it takes under 10 minutes to make and will be ready for dessert after any main meal.

Let’s Face the FATS – SUGAR!!

Have you ever people watched? Some are big, others are athletic while others still are very thin. Have you noticed how they carry themselves or move and have you wondered what they may be snacking on? I wonder, what they look like on the INSIDE! There is a huge correlation between the Sugar and Fat in our food. What is it and what do we do about it and do we even choose to?

For almost a lifetime now we’ve been told to cut down on our consumption of fats. 0% Fat is huge business and most of us now choose Low Fat or No Fat. The only problem is, that we’ve unknowingly created, is the substitution of Fat for Sugar. Let’s face the facts. Quitting Sugar is tough. It will take about 2 months before you are Scot-free. Most psychologists estimate between 21-66 days to change a habit and a similar amount of time on a physical level. You will go through a detox period where you feel crap! This was 3-7 days for me. For some this can last for up to 6 weeks. I’ve done it a few times and it’s best to be away from your own house and habits and further away from cafes and bakeries!! At least for the first week.

It’s important to go Cold Turkey which means no sugar, no fruit, no fruit juice and no agave or honey. The experts agree it’s far better to break the addiction first than re calibrate afterwards. Physiologically, Sugar by-passes the hypothalamus in our brains which tells us we’ve eaten and we are full. Sugar goes straight to the liver to cause havoc. Fat and Proteins on the other hand tell us when we’re full and curb any cravings. No wonder I can eat that full tub of 0% Fat yoghurt and I have trouble getting through half of the Full Fat variety!!

The solution is simple: EAT FAT and Some PROTEIN. Once the sugar is gone replace it with wholesome, unprocessed fats like eggs, cheese and nuts. Remove biscuits from the cookie jar and replace them with nuts and seeds which will take care of that afternoon ‘treat’ craving and in NO Way would you feel like you’re denying yourself.

  • Fructose completely by-passes our “full” mechanism
  • Fructose is directly metabolised into body fat

Love IT or Lump IT … Let’s Talk Garlic

Why do some people simply Love Garlic while others Avoid it? Let’s at least discuss it and see what we might be missing out On or Not!! I’ve always wanted to talk about garlic because I simply adore the herb. It’s smell and flavour so distinct, welcoming and familiar, but I will at times leave it out of my cooking not to over-power other herbs and spices. Garlic is an intensely powerful herb and has been used in many Folk Remedies the world over for centuries. It originated in parts of Asia in ancient times of the Neolithic period for use in Food, Flavouring and Medicine. Its spread continued to Egypt, India and the Middle East and its medicinal properties were first recorded in the Sanskrit medicinal treatise, the Charaka Samhita (2nd century BC).

I’d like to explore and share a simple family cold and flu remedy that has been passed down to me. It works for us so it might work for you too.

It’s odour however was considered offensive in upper-class Indian society and its stimulant properties undesirable among Buddhists. So let’s take a look at what’s in season in the Southern Hemisphere this July.

Wow!! What an amazing harvest! There is just so much to Cook! Where to start?

Hmm … I can definitely taste a whole heap of cassarole and baked dishes with all the root vegetables available. Try Cooking Pot’s Lemon Potatoes or Vegetarian Lasagne, and, You will never go wrong with a Potato-crusted, Spinach and 3 Cheese Pie!

Ok! Let’s take a peek at the fruit before this article gets too long. Hmm… I can taste a whole lot of different crumbles with all the Apples and Rhubarb. Don’t worry about the wheat and sugar when you can substitute oats and a bit of honey or maple syrup and end up with a healthier crumble. On the other hand The Upside-Down Mandarin Round is one of my favourites! Wow! What a wonderful harvest. Ready to Cook? I simply adore blueberries!! Blueberry sugar-free and dairy-free ice-cream, wheat-free blueberry crostata heated and served with ice-cream. The list just keeps going: Blueberry layered cake, Blueberry Raw Chocolate tarts… hmm yummy!!

Removing the blueberries we have cherries and strawberries where I would add chocolate or vanilla to either of them or make a compote or homemade jar or munch on them on their own. Berries in drinks are a favourite with me and here we can definitely go Naughty or Healthy, cold and refreshing! For something different add peaches to a mild curry and taste the flavour!

The June Vegetable harvest is just packed with all the foods that are Healthy, Colourful and simply delicious. To be honest I don’t know where to start!! There are hundreds of salads here waiting to be put together. Whatever takes your fancy can be combined to make a Wholesome, Healthy and Sustainable salad. Here we use our imagination, creativity and taste-buds. Cooking Pot the iPhone App gives some fantastic recipe ideas.

My simple rule of thumb with salads is colour. If it’s colourful and looks fantastic it usually is. For example why do tomatoes go with greens, cucumber and onion? Capsicum adds more texture and colour and slices of orange appear just vibrant against salad greens. Another example would be the warm lentil salad where the deep earthy colour of the lentil is broken by the strong red of tomato. Then we can take a look at a baked vegetable salad on a bed of greens and garnished with pepitas. It not only comes together visually but your taste-buds will love it too.

On a more scientific note the iron in greens needs vitamin c to be better absorbed by our bodies so nature is definitely telling us something. Don’t be fooled, a more colourful and vibrant looking salad is also much better for you.
