Spring: Tis the Season to EAT…

Let’s head north and see what we can cook up in Spring! Remember, Cooking Pot’s aim is fast, cheap, sustainable, super healthy and delicious food.

 

Spring is one of my most favourite seasons. Everything is so fresh and new and bursting with blossoms and life. This is definitely the time to get outside, breathe the fresh spring air and get planting. Lucky for you the harvests are already in at your local Farmer’s Markets. Below are some of the fresh produce available.

 

VEGETABLES

In the spring we have a slightly different pot of ingredients to choose from. The seasonal list above is great! I simply adore arugula, avocado, beet (leaves and root), broccolini, chard… To help me not re-listing everything; how about I just say EVERYTHING! What are your favourites!

 

Rhubarb and apple pie served warm with cream and ice-cream … Yum! Please note: Only consume the rhubarb stalk after boiling it thoroughly. The leaves contain a toxin. Never consume it raw. Speaking of raw, berries are a favourite and using them in raw cooking is a treat.
