Let’s Face the FATS – SUGAR!!

Have you ever people watched? Some are big, others are athletic while others still are very thin. Have you noticed how they carry themselves or move and have you wondered what they may be snacking on? I wonder, what they look like on the INSIDE! There is a huge correlation between the Sugar and Fat in our food. What is it and what do we do about it and do we even choose to?

For almost a lifetime now we’ve been told to cut down on our consumption of fats. 0% Fat is huge business and most of us now choose Low Fat or No Fat. The only problem is, that we’ve unknowingly created, is the substitution of Fat for Sugar. Low Fat or No Fat products have an enormous amount of sugar to compensate for the lack of Fat and the intention of the producer to make their food product palatable and similar in texture to the Full Fat variety.

Today we eat at least 1 kg of sugar per week! Sugar increases our appetite, is addictive, stacks on the weight and makes us feel utterly miserable. Here is a simple solution to get off the Sweet White and Enjoy the Energy that is Yours!

What a wonderful change from traditional dinners ... Yummers!!... Served with a nice red.

What a wonderful change from traditional dinners … Yummers!!… Served with a nice red.

Let’s face the facts. Quitting Sugar is tough. It will take about 2 months before you are Scot-free. Most psychologists estimate between 21-66 days to change a habit and a similar amount of time on a physical level. You will go through a detox period where you feel crap! This was 3-7 days for me. For some this can last for up to 6 weeks. I’ve done it a few times and it’s best to be away from your own house and habits and further away from cafes and bakeries!! At least for the first week.

Download the App here and step into some Deliciously Healthy Recipes that are Sugar Free: https://itunes.apple.com/us/app/cookingpot/id586052832?ls=1&mt=8

It’s important to go Cold Turkey which means no sugar, no fruit, no fruit juice and no agave or honey. The experts agree it’s far better to break the addiction first than re calibrate afterwards. Physiologically, Sugar by-passes the hypothalamus in our brains which tells us we’ve eaten and we are full. Sugar goes straight to the liver to cause havoc. Fat and Proteins on the other hand tell us when we’re full and curb any cravings. No wonder I can eat that full tub of 0% Fat yoghurt and I have trouble getting through half of the Full Fat variety!!

The solution is simple: EAT FAT and Some PROTEIN. Once the sugar is gone replace it with wholesome, unprocessed fats like eggs, cheese and nuts. Remove biscuits from the cookie jar and replace them with nuts and seeds which will take care of that afternoon ‘treat’ craving and in NO Way would you feel like you’re denying yourself.

More Facts to Ponder:

  • Fructose completely by-passes our “full” mechanism
  • Fructose is directly metabolised into body fat
  • Gorge on “Good” Fats – they fill you up
  • FAT does not make you FAT!!

So let’s take a look at what’s in season in the Southern Hemisphere this July.

Beet, Broccolini, Onions, Cabbage, Carrots, Leek, Spinach, Pumpkin, Parsnips, Silverbeet, Potatoes, Asian Greens, Onions, Garlic, Celery

Avocado, Custard Apple, Limes, Lemons, Mandarins, Apples, Oranges, Rhubarb, Pineapple, Pomegranate, Nashi, Kiwifruit

Wow!! What an amazing harvest! There is just so much to Cook! Where to start?

Hmm … I can definitely taste a whole heap of cassarole and baked dishes with all the root vegetables available. Try Cooking Pot’s Lemon Potatoes or Vegetarian Lasagne, and, You will never go wrong with a Potato-crusted, Spinach and 3 Cheese Pie!

This is definitely the time to start baking! Bake and freeze for later! Sometimes I find that 1 nights’ cooking is enough for 3 dinners or lunches. Casseroles, pies, bakes can be refridgerated for the following night or frozen and so many Vegetarian, Vegan and Meat variations to choose from. Just choose your preference when searching for a recipe on the App. Chicken and Leek Quiches come to mind.

Taste the difference of your food when the fresh produce you use is in season and better still Organic and the only thing that tops that is Home-grown! I’m salivating already and we haven’t even scratched the surface of the recipes available on Cooking Pot the iPhone App!! Get it here to find more recipes like these, a Shopping List on the Go and if you see that capsicum on special don’t be afraid to buy the box because you can take a look at the recipes available to cook, before you plunge in!! : https://itunes.apple.com/us/app/cookingpot/id586052832?ls=1&mt=8

Ok! Let’s take a peek at the fruit before this article gets too long. Hmm… I can taste a whole lot of different crumbles with all the Apples and Rhubarb. Don’t worry about the wheat and sugar when you can substitute oats and a bit of honey or maple syrup and end up with a healthier crumble. On the other hand The Upside-Down Mandarin Round is one of my favourites! The lemons are another ingredient which stand out and make yummy Lemon Butter or salad dressing and the Avocados make a divine Raw Chocolate Cake.

The winter harvest is so plentiful and delicious. Cooking Pot the iPhone App can be downloaded here: https://itunes.apple.com/us/app/cookingpot/id586052832?ls=1&mt=8 and for more information click here: http://www.progressiveaspect.com/cookingpot .

Herbology: Too HOT or NOT!!

So what is your definition of Hot? Stifly heat outdoors, Sexy Hot or gut-wrenching Spicy Hot!! We’ll go with the latter and talk Chilli Hot! There’s a lot to be said for chilli. It’s a beautiful looking shrub growing to about 1 metre which bears shiney and crisp, colourful fruit but the heat is it’s thorn. Having said that, not all peppers are hot. Some infact are swee, But All peppers are known for their culinary flavour.

So what are they NOT known for. Let’s look at cooking, gardening remedies, circulation, sinus releif, cancer just to name a few. The hotness of a chilli determines it’s use except in cooking where flavour is also concerned. The hotness of a chilli is measured “Scoville Heat Units” (SHU). A mild bell pepper measures 0, a jalapeno 2500-4000 units and a Habanero measures 200 000 – 500 000 units.

Peppers are also good for you high in vitamins and minerals especially vitamin C. 100g of chilli provides 240% RDA vitamin C. It also contains significant levels of magnesium, potassium iron and manganese. These aid in conrolling heart rate, blood pressure and anti-oxidant properties which facilitate tissue repair and known to boost immunity. Jerk Chicken with Beans and Rice

Jerk Chicken with Beans and Rice

Some Caribbean, Indian and Asian cooking likes a lot of heat. Caribbean and Mexican cooking uses scotsdale and harbanero peppers for untimate heat. For a milder taste jalapenos are used. Indian cooking prefers harbanerons and Asian cooking is famous for it’s red birds-eye chilli. In cooking, flavour is just as important as heat if not more. As a result de-heating techniques are applied such as de-seeding, ommitting the bulb or simply cooking the chilli whole without cutting it then removing during the cooking period when the appropriate flavour and heat have been reached.

Dishes can be made milder by using bell peppers or capsicum which are rather sweet but boost the flavour of many dishes. Sweet paprika is another example found in Eastern European dishes like Goulash or Golombki where both tomato and cream are used as the sauce base. Both of these fantastic recipes are found on Cooking Pot the iPhone App. Download it here for something different: https://itunes.apple.com/us/app/cookingpot/id586052832?ls=1&mt=8

Chilli is also used as a garden spray to ward off pests and help your veggies grow without pestiside. Grind 4 birds-eye chillis and 2 cloves garlic in a pestle and mortar. In a 750ml container add ½ tbsp soap flakes, chilli and garlic paste and 500ml boiling water and mix. Let stand until cool and strain into a spray bottle. Will keep for 2 weeks. Spray on your veggies for a natural insecticide and watch your garden flourish!

Herbology: Reinventing the Wheel with Turmeric!

Right!! I’ve always wanted to write about herbs. You’ve probably heard it all before. The old folk remedy or new cure for something or other or just a pinch or this and a pinch of that to make an ordinary dish outstanding. Turmeric is one of my favourites and one that I use all the time. I put it in my rice!

There are many health benefits associated with curcumin the active ingredient in turmeric but it also makes for a very important ingredient in cooking. Cooking Pot the iPhone App provides many such meal ideas which are Quick, Healthy and Easy to make.

Rice with Nuts and Turmeric

Rice with Nuts and Turmeric

Turmeric presents itself as a root vegetable and is relative of ginger. It’s mostly grown in India and Asia and has been used in those areas as a powerful non-inflammatory. It is also know for it’s anti-oxidant properties and has been used to treat skin infections to cancer. Medical studies have not been able to confirm the medicinal value of turmeric but various studies have been undertaken and anti-oxidant and anti-inflammatory properties have been confirmed.

What is a curry without turmeric? It’s subtle flavour and colour give us a tasty dish that we all know and I’m sure there is a curry out there for everyone! Vegetarian, Vegan, Raw – Cooking Pot the iPhone App has something for you all categorised to take the headache out of sifting through endless recipes. Set your preferences once and the built-in filter does the hard work for you and it doesn’t stop at lifestyle choice but instead crosses over to allergy and intolerance preferences with Lactose-free, Gluten-free etc recipes available at your fingertips.

Turmeric is also know to aid cholesterol absorption by decreasing harmful levels of the stuff and aid in skin repair by hindering the aging process. It’s anti-oxidant properties or it’s ability to fight free-radicals may most probably be an attributing factor in slowing that aging process. These may be old folk remedies but there may be something in it. I don’t know. Post your comments.

What I do know is that rice has never tasted better without the addition of turmeric. It’s subtle bitter flavour is a winner at my place. Turmeric is also added to curries to give it that distinct colour. As a matter of fact, it is also added to mustard, butter and cheese for that same reason.

My favourite curry is a simple Tatka Dhal. It’s Vegan and bursting with flavour and loads and loads of fresh tomatoes. It doesn’t have to go on rice it tastes just as good on pancakes, in a pitta pocket for lunch or the following day all by itself! The recipe can be found on Cooking Pot the iPhone App. It’s a lot Easier to make than you think and if you decide to make a big batch there is always plenty to go round and more to freeze for later!

Summer is here in the north. This is the perfect time for fresh fruit and salads, cool drinks by the water or iceblocks by the pool. I’m sure the grill is heating up and it’s time for a BBQ with family and friends. Let’s find out what’s in season this month and what we can cook with a June Harvest.

June Fruit

Blueberries, Cherries, Strawberries, Peaches

June Vegetables

Beetroot, Broccli, Cabbage, Asparagus, Collards, Cucumbers, Lettuce, Onions, Peas, Snap Peas, Squash, Spinach, Zucchini, Tomatoes, Bell Pepper, Carrots, Corn

Wow! What a wonderful harvest. Ready to Cook? I simply adore blueberries!! Blueberry sugar-free and dairy-free ice-cream, wheat-free blueberry crostata heated and served with ice-cream. The list just keeps going: Blueberry layered cake, Blueberry Raw Chocolate tarts… hmm yummy!!

Removing the blueberries we have cherries and strawberries where I would add chocolate or vanilla to either of them or make a compote or homemade jar or munch on them on their own. Berries in drinks are a favourite with me and here we can definitely go Naughty or Healthy, cold and refreshing! For something different add peaches to a mild curry and taste the flavour!

The June Vegetable harvest is just packed with all the foods that are Healthy, Colourful and simply delicious. To be honest I don’t know where to start!! There are hundreds of salads here waiting to be put together. Whatever takes your fancy can be combined to make a Wholesome, Healthy and Sustainable salad. Here we use our imagination, creativity and taste-buds. Cooking Pot the iPhone App gives some fantastic recipe ideas.

My simple rule of thumb with salads is colour. If it’s colourful and looks fantastic it usually is. For example why do tomatoes go with greens, cucumber and onion? Capsicum adds more texture and colour and slices of orange appear just vibrant against salad greens. Another example would be the warm lentil salad where the deep earthy colour of the lentil is broken by the strong red of tomato. Then we can take a look at a baked vegetable salad on a bed of greens and garnished with pepitas. It not only comes together visually but your taste-buds will love it too.

On a more scientific note the iron in greens needs vitamin c to be better absorbed by our bodies so nature is definitely telling us something. Don’t be fooled, a more colourful and vibrant looking salad is also much better for you.

By cooking what’s in season also saves on your hip pocket and Cooking Pot is just the App that helps save those pennies. All recipes are categories by ingredient choice so if you see that box of tomatoes on the cheap you have a whole bunch of recipes at your fingertips ready to “Cook Out NOT Throw Out!”
