Ingredients

1/3 cup rocket

1/3 cup green beans

1 small tomato

80g feta, cubed

1 egg, hard boiled and quartered

1 tbsp seeded mustard

1 tbsp cold pressed nolive oil

1 tbsp balsamic vinegar

 

Method

  1. In a medium sized bowl layer rocket, beans and tomato then add feta and egg.
  2. In a small jar shake together mustard, balsamic and olive oil. Pour over salad.
  3. ENJOY!!

 

This is such a simple salad. Healthy and satisfying. Enjoy it as a meal today!!

In the South it’s growing warmer and Spring is almost upon us. The sun is rising just a bit earlier and the seeds and seedlings are in the grown ready to grow. The end of winter brings a delightful harvest with many citrus fruit, berries, and winter vegetables.

Herbs grow well this time of year before the sun comes out hot and strong. It’s the time to grow, harvest and store them. As you and I both know some herbs are just unavailable at certain times of year. Make sure you’ve got your favourites! Storing, fermenting and canning are a few things to explore in the near future. Maybe You’d like to use Baked Veggies with a creamy mushroom and Leek sauce or Ordinary Pumpkin Soup which is anything but! One of my favourites is the Potato-crusted Spinach and 3 Cheese Pie!

Maybe an Apple and Rhubarb Crumble may take your fancy served warm with cream or ice-cream. So many possibilities abound. Vegetarian, Vegan, Gluten-Free Gyozas – (Japanese Dumplings) … A MUST Try!!

Recipe Wednesday brings Vegetarian or Vegan or Gluten-Free Gyoza which are Japanese Dumplings. Try them Once and you’ll be hooked just like me! When living in China we had the traditional Chinese Pork Gyozas quite often for lunch or dinner… sometimes breakfast. I hope you are following my trail of thought!! Will You get Addicted?? 

The Vegetarian variety just makes them so much healthier. I now make a few different variations to mix things up. Vegetarian Gyoza – Recipe on Cooking Pot for iPhone

 

Vegetarian Vegan Gyoza (Japanese Dumplings)

Makes about 30 Gyozas

Ingredients

2 cabbage leaves, shredded

5-7 shallots

3-4 pieces of celery with leaves (to make 1 stalk)

1 bunch coriander

½ small carrot

1 packet gow gee pastry (look for Vegan or Gluten-free if preferable)

1.5cm ginger, juice and a little pulp

1 tbsp sake

1 tbsp sesame oil

3 tbsp potato starch/flour

1 ½ cups quinoa, cooked

cooking oil

1 ½ tbsp flour (Gluten-free if preferable)

200ml water

Method

  1. Wash and dry all veggies with a tea-towel. Process all veggies except ginger. Process coriander last.
  2. Grate ginger.
  3. In a small mixing bowl mix ginger, sake, sesame oil and potato starch to form a paste.
  4. In a large bowl combine veggie mix, potato paste and quinoa.
  5. To make dumplings: put a teaspoon amount on the pastry, use a bit a water on the edges and squeeze the pastry together.
  6. To cook the Gyoza: Mix 1 ½ tspn flour with 200ml water and set aside. Grill gyoza in a frying pan on 1 side, then turn and add the flour/water mix. Close the lid and steam on low.
  7. Once cooked remove lid until water evaporates. This leaves them crispy. Drizzle with sesame oil and place on a serving dish.
  8. Serve with Vinegar/Soy Dipping Sauce. 1 part Rice vinegar to 1 part Soy Sauce or vary proportions to taste.

 

There are a few steps here but it’s sure worth it! I usually make at least 90 and freeze them. Best frozen before they are cooked. They are fast to defrost and easy to cook up!

 This is a list of the fresh produce in season and available in August. Remember to Cook Out Not Throw Out!! Healthy and Wholesome cooking can go light on your hip pocket too. It just might take a tiny little bit of planning and you’ll soon find that having a Healthy, Wholesome and ready to eat meal on your table in minutes. It takes far less time than driving to the nearest take-out!!

This month the produce is ripe for Stir-fry! Any Stir-fry! Be it meat, egg, tofu or nut it’s fast and completely Delicious!! Try it with a brown rice, quinoa and nut or lentil mix or if you don’t have the extra time noodles are faster. Rice is a fantastic food to add turmeric to and improve your health at the same time. 

Left over stir-fry can be made into Japanese pancakes called Okonomiyaki. This is a great breakfast eaten regularly in Japan. If this takes your fancy be sure to supply yourself with plenty of Yakitori Sauce. The choice of seasonal fruit is fantastic! Blueberries, figs and mangoes are among my favourites or should I be more precise and say Are my favourite. Right now, Blueberry Ice-cream is screaming at me and so is a warm Blueberry Crostada served with fresh cream. Then a Raw Mango Pie or a warm Fig and Pumpkin Tart. Hmm Yummy… 

Ok, I think I’ve just inspired myself and must go make something for dessert, after all, all those quick stir-fry dinners might just leave me enough time to make an Awesome Treat!! Remember to Cook Out Not Throw Out so check your pantry first.

Ingredients

Base:

2 cups cashews

1 cup dates

1 tbsp coconut oil

½ salt

Topping:

½ cup coconut oil

½ cup lemon juice

½ tsp turmeric

2 tbsp maple syrup (optional)

Method

  1. In a food processor, process all Base ingredients: nuts, dates, oil and salt until you have a slightly sticky consistency. Press into a baking tray.
  2. In a bowl hand beat all topping ingredients. Make sure the coconut oil is melted. Pour on top of the nut mixture in the tray, sprinkle with coconut if desired and refrigerate immediately.
  3. Let set at least 40 minutes. Slice and serve cold straight from the fridge.

Variations: For the base you may prefer almonds, walnuts, coconut, macadamia or a mixture. Dates can be substituted with sultanas, apricots or another sweet dried fruit of choice. You might like to add 1 tsp of ginger in the base to spice things up!

For the Topping adding lemon zest would make the slice more tart. Combining lemon with orange would sweeten it. Stevia can also be added to further sweeten the topping. The imagination can fly free here. It’s up to You!

The BEST thing about this recipe is that it takes under 10 minutes to make and will be ready for dessert after any main meal.

Cook Out Not Throw Out – Super Quick Meat and Mushroom Pie

Try to cook a large amount of filling, bake 1 and freeze the rest for that extra busy day (or 3). If there’s no time to make your own pastry buy the ready made stuff just be sure to read the labels. If you have an intolerance to gluten buy Gluten-Free. If you have a little more time use rice or grated or baked potato/vegetable to make a crust. Most importantly it’s best to eat Organic of Home-grown produce.

Super Quick Beef and Mushroom Pie 

Ingredients

500g ground beef

2 osso bucco steaks, bacon or sausage

400g sliced mushroom

2 tbsp butter

cooking oil

1 onion, diced

2 cloves garlic, finely chopped

2 potatoes, finely diced

2 tsp beef stock

2 tsp sweet paprika

salt and pepper to taste

1-2 cups water, as needed

puff pastry

2 tomatoes, sliced

Method

  1. Sear the steaks and chop. In the same pan sauté the onion, add the beef, garlic, paprika and cook stirring.
  2. Add the mushroom, butter and cook until cooked though.
  3. Add the potato, stock and salt and pepper to taste. Use as little water as possible. Cook on low stirring occasionally. The potatoes will soften and thicken the mixture. Add more water if necessary.
  4. Lay out the puff pastry in a pie dish and pre-bake for 10 minutes. Scoop in the meat mixture, place the sliced tomatoes on top and decorate with pastry. Place in a hot oven (220C/425F) for 30 minutes or until the pastry is golden brown.

Variation: Empty your fridge of all those half eaten vegetables and any leftover meat. Uneaten food cannot be left in the fridge for very long so “Cook Out Not Throw Out”!!

While it’s baking prepare a Fresh Salad and Who-la … Done! Just think how Quick and Easy it would be if you had one already pre-made and unfreezing in the fridge!!
