Cook Out Not Throw Out – Super Quick Meat and Mushroom Pie

Try to cook a large amount of filling, bake 1 and freeze the rest for that extra busy day (or 3). If there’s no time to make your own pastry buy the ready made stuff just be sure to read the labels. If you have an intolerance to gluten buy Gluten-Free. If you have a little more time use rice or grated or baked potato/vegetable to make a crust. Most importantly it’s best to eat Organic of Home-grown produce.

Super Quick Beef and Mushroom Pie 


500g ground beef

2 osso bucco steaks, bacon or sausage

400g sliced mushroom

2 tbsp butter

cooking oil

1 onion, diced

2 cloves garlic, finely chopped

2 potatoes, finely diced

2 tsp beef stock

2 tsp sweet paprika

salt and pepper to taste

1-2 cups water, as needed

puff pastry

2 tomatoes, sliced

  1. Sear the steaks and chop. In the same pan sauté the onion, add the beef, garlic, paprika and cook stirring.
  2. Add the mushroom, butter and cook until cooked though.
  3. Add the potato, stock and salt and pepper to taste. Use as little water as possible. Cook on low stirring occasionally. The potatoes will soften and thicken the mixture. Add more water if necessary.
  4. Lay out the puff pastry in a pie dish and pre-bake for 10 minutes. Scoop in the meat mixture, place the sliced tomatoes on top and decorate with pastry. Place in a hot oven (220C/425F) for 30 minutes or until the pastry is golden brown.

Variation: Empty your fridge of all those half eaten vegetables and any leftover meat. Uneaten food cannot be left in the fridge for very long so “Cook Out Not Throw Out”!!

While it’s baking prepare a Fresh Salad and Who-la … Done! Just think how Quick and Easy it would be if you had one already pre-made and unfreezing in the fridge!!

If you’re cooking 1 meal make enough for 2 or more, freeze and watch it save Your Time. Remember to “Cook Out Not Throw Out”!!
